Catalunya ha estat el punt de partida d\u2019aquesta iniciativa, que aspira a cr\u00e9ixer i arribar a centres formatius de tot Espanya.<\/p>\n<p style=\"font-weight: 400;\">Marga Manucharyan, alumna de Vedruna Pro, Escola Superior d\u2019Hostaleria, de \u00a0Barcelona, s\u2019ha proclamat vencedora despr\u00e9s d\u2019una jornada d\u2019alta exig\u00e8ncia culin\u00e0ria al Mirador Petit del Castell de Peralada amb una \u201cEscudella i carn d\u2019olla\u201d, plat tradicional de la gastronomia catalana.<\/p>\n<p style=\"font-weight: 400;\">Aquesta proposta, composta per un caldo acompanyat de carn i verdures, ha sorpr\u00e8s per la seva acurada elaboraci\u00f3, intensitat dels seus sabors i la combinaci\u00f3 equilibrada entre ingredients, i s\u2019ha imposat entre les cinc finalistes. Els participants han disposat de dues hores per preparar en directe les seves creacions, en una final molt intensa on cada xef ha presentat una reinterpretaci\u00f3 personal d\u2019un plat tradicional.<\/p>\n<p style=\"font-weight: 400;\">El jurat el formaven els prestigiosos\u00a0Hermanos Torres, Sergio i Javier \u2014imatge del canal Horeca de Transgourmet i amb 3 estrelles Michelin\u2014, i Javier Mart\u00ednez, xef del Restaurant Castell Perelada, tamb\u00e9 amb estrella Michelin. Per escollir el guanyador, han avaluat aspectes com el sabor, la presentaci\u00f3, la t\u00e8cnica, la reinvenci\u00f3 de la tradici\u00f3, l\u2019aprofitament del producte i l\u2019organitzaci\u00f3 a la cuina.<\/p>\n<p style=\"font-weight: 400;\">Els Hermanos Torres han destacat que \u201cfeia temps que no presenci\u00e0vem un nivell tan elevat, i en aquesta ocasi\u00f3 liderat per dones, a m\u00e9s. Els plats i els sabors ens han sorpr\u00e8s molt, i veure una generaci\u00f3 amb tant talent ens convida a mirar el futur de la gastronomia amb optimisme\u201d.<\/p>\n<p style=\"font-weight: 400;\">Per la seva banda, Llu\u00eds Labairu, director general de Transgourmet Ib\u00e8rica, ha expressat el seu orgull per liderar un concurs dedicat a les joves promeses de la cuina. \u201cAquest sector necessita passi\u00f3, i avui hem vist plats que s\u00f3n el resultat d\u2019un somni complert. El nostre comprom\u00eds \u00e9s acompanyar les noves generacions perqu\u00e8 puguin continuar creixent\u201d.<\/p>\n<p style=\"font-weight: 400;\">Marga Manucharyan, guanyadora d\u2019aquesta edici\u00f3, ha rebut un trofeu i gaudir\u00e0 d\u2019una estada exclusiva a les cuines dels Hermanos Torres, on treballar\u00e0 amb el seu equip i viur\u00e0 una experi\u00e8ncia formativa \u00fanica, aprenent dels seus processos, filosofia i exig\u00e8ncia creativa.<\/p>\n<p style=\"font-weight: 400;\">Tots els finalistes han obtingut reconeixements, juntament amb els seus tutors i les escoles participants per la seva destacada tasca formativa:<\/p>\n<p style=\"font-weight: 400;\">2a Ona Sendra. Ravioli de tardor\u00a0(Escola d\u2019Hostaleria i Turisme de Barcelona).<\/p>\n<p style=\"font-weight: 400;\">3a In\u00e9s Martino. Botifarra de mar amb carxofes\u00a0(Institut de Gastronomia de Barcelona).<\/p>\n<p style=\"font-weight: 400;\">4t Albert P\u00e9rez. Romescada de mar i muntanya del territori\u00a0(Escola d\u2019Hostaleria i Turisme de Cambrils).<\/p>\n<p style=\"font-weight: 400;\">5a Marta Rueda. Canel\u00f3 de mar i muntanya\u00a0(Escola d\u2019Hostaleria d\u2019Osona).<\/p>\n<p style=\"font-weight: 400;\"><strong>Un concurs per impulsar el talent jove a l\u2019hostaleria<\/strong><\/p>\n<p style=\"font-weight: 400;\">La primera edici\u00f3 de \u201cTransgourmet Joves Xefs\u201d va comen\u00e7ar el setembre passat, amb l\u2019obertura de les inscripcions per a les escoles d\u2019hostaleria de Catalunya. Cada centre va presentar un estudiant amb el seu tutor i tutora, enviant una recepta original acompanyada d\u2019una fotografia.<\/p>\n<p style=\"font-weight: 400;\">D\u2019entre totes les candidatures, el jurat va seleccionar els 10 semifinalistes, que van visitar un centre Gros Mercat per abastir-se dels productes necessaris per a la preparaci\u00f3 del plat i demostrar la seva habilitat en directe al Gastron\u00f2mic F\u00f2rum Barcelona.
